Honeydew Chicken Stir Fry

Ingredients

  • Marinade:
  • 2tsp. Oyster Sauce
  • 1 ½ tsp. shao-hsing wine or sherry
  • 1 tsp. light soy sauce
  • 1 tsp. sesame oil
  • ½ tsp. grated ginger
  • 2 tsp. cornstarch
  • ¾ tsp. sugar
  • ½ tsp. salt
  • Pinch of white pepper
  • 1 ½ pound boneless skinless chicken breast, cut into cubes.
  • Combine all ingredients in bowl. Add diced chicken and set aside for minimum of one hour.
  • 2 tbsp. grape seed oil
  • ½ c small diced red bell pepper
  • 1 ½ tbsp. minced ginger
  • 2 tbsp. minced garlic
  • 1/3 honeydew melon, cubed
  • 1 ½ tsp sesame oil
  • 1 tbsp. oyster sauce
  • 1/8 c sherry, or to taste
  • 1 ½ c. cremini mushrooms, or shitake mushrooms

Directions

  1. Heat skillet over medium high heat.
  2. Add grape seed oil heat and then add marinated chicken.
  3. Brown on all sides, stir in garlic, ginger cook for one minute.
  4. Add bell peppers and mushrooms, cook for one minute.
  5. Add sherry, sesame oil, oyster sauce. Cook for two minutes.
  6. At the very end add honeydew and warm thru about one minute.
  7. Serve over rice.
