Sweet Potato Waldorf Salad

Makes 4 servings


  • 2 small sweet potato
  • 2 medium apple, cubed
  • 1/2 cup chopped celery
  • 4 Tbsp chopped walnuts
  • 4 Tbsp golden raisins
  • 4 Tbsp miniature marshmallows
  • 4 Tbsp mayonnaise
  • 4 Tbsp sour cream
  • 1 tsp. lemon juice


  1. Place the sweet potato in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 20 minutes or just until tender. Drain and cool completely.
  2. Peel the potato and cut into cubes; place in a medium bowl. Add the apple, celery, walnuts, raisins, and marshmallows.
  3. In another bowl, combine mayonnaise, sour cream, and lemon juice. Pour over salad and toss gently. Cover and refrigerate for at least 1 hour before serving.
