Stuffed Squash

This recipe is gluten free

Ingredients

  • 3 acorn squash cut in half and seeded.
  • 1 package of Meatloaf Mixture from meat department
  • 4 Apples chopped
  • 2 stalks celery chopped
  • 1 cup pecans or walnuts
  • 1 onion chopped
  • 1 cup dried cranberries
  • 1 egg
  • 1 tsp ground sage
  • 1 tsp ground rosemary
  • 1 ½ tsp salt plus more to taste
  • ½ tsp pepper

Directions

  1. Preheat oven to 350 degrees. In a large bowl mix meat, apples, celery, nuts, onion, cranberries, egg and spices until well combined. Stuff squashes and lightly season tops with salt. Bake in oven for an hour to an hour and a half until tops are well browned and squash is soft. Enjoy.
