Spiced Beef Short Ribs with Dried Fruit

Makes 4 servings


  • 3 lb. beef short ribs
  • Gooseberries dry rub mix
  • 2 tbsp. oil or drippings
  • 1 medium onion sliced thin
  • 2 lemons sliced thin
  • 1 cup water
  • ½ cup pitted prunes
  • ½ cup dried apricots
  • 2 tbsp. sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground allspice
  • 3 tbsp vinegar


  1. Season meat on all sides with Gooseberries dry rub mix. Layer in braising pan and top with onion and lemon.
  2. Cover and let sit for one hour or over night. Dredge ribs in flour and brown on all sides in hot oil in a heavy skillet. Remove meat and pour off fat. Put meat back in braising pan adds water and brings to a boil. Reduce heat, cover and simmer for 1 ½ hours.
  3. Add dried fruit and remaining ingredients. Simmer, adding more water if necessary, for one our. Serve with rice.
