Spanish Rice with Chorizo

Ingredients

  • 6 cup instant Rice
  • 3 tbsp. olive oil
  • 1 ½ tsp. curry powder
  • 1 ½ tsp. ground black pepper
  • 1 large onion chopped
  • 1 ½ tsp minced garlic
  • 1 ½ tsp. Tabasco sauce
  • ½ cup water
  • 1 ½ cans tomato sauce
  • 1 ½ tsp. ground cumin
  • 2 cup Ether ground chorizo or 1 lb. sliced chorizo

Directions

  1. In a large sauté pan or small stock pot heat olive oil Med. High heat. Add curry powder, cumin powder, pepper, garlic, Tabasco sauce stir together until blended well. Add onions and Chorizo cook until transparent.
  2. Add rice and coat rice with oil and spice mix. Let stand for 2-3 minutes.
  3. Add water and stir in. Cover for 2-4 minutes. Stir and add tomato sauce, blend well and cook for 5-8 minutes, stirring every couple of minutes. Remove from heat and add finely chopped carrots and peas. Let stand for 5 minutes.
