Scallops Ageganata

Ingredients

  • 3 tbsp dried breadcrumbs
  • 1 tsp parsley, fresh
  • ¼ tsp oregano
  • 1 lemon peeled, grated
  • 1 tbsp margarine
  • ½ tsp margarine
  • 8 oz. scallops, bay or sea
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp dry vermouth
  • 1 cup garlic

Directions

  1. In a mixing bowl, combine crumbs, parsley, oregano and lemon peel; add margarine and mix well until thoroughly moistened. Set aside.
  2. Preheat broiler, in a shallow flameproof 1 ½ cup casserole, arrange scallops; mix together remaining ingredients and pour over scallops.
  3. Broil 6 inches from heat until scallops are opaque, 4 to 5 minutes. Sprinkle crumb mixture evenly over scallops and broil until crisp and lightly browned, about 1 minute longer.
