Sautéed Shrimp with Andouille Sausage

Ingredients

  • 1 ½ -2 lb. uncooked shrimp, peeled and deveined
  • ¼ tsp thyme
  • ¼ tsp turmeric
  • 1 tsp garlic crushed
  • ¼ tsp cayenne pepper
  • 1 ½ lb Andouille sausage
  • ½ cup Riesling wine off dry
  • ¼ cup celery
  • ¼ cup red bell pepper minced
  • ½ cup diced tomato
  • ¼ cup scallions minced
  • Pinch saffron
  • 1 cup heavy cream
  • 2 tbsp olive oil

Directions

  1. Place shrimp in bowl and season with thyme, turmeric, garlic, cayenne pepper. Heat skillet with olive oil and when warm place shrimp in skillet and sauté for 3 ‚Äì 4 minutes. Remove and set aside.
  2. In same skillet add your wine and deglaze the pan. Add the celery, peppers, scallions, tomato, and saffron. Cook until celery and peppers are just tender about 4 minutes.
  3. Place shrimp back into pan and add cream. Simmer for 3-4 minutes and serve over rice.
