Ruby Chicken

Makes 6-8 servings

Ingredients

  • 2 ½ to 3 pounds chicken breasts
  • 1/3 cup flour
  • ½ tsp salt
  • 4 tbsp butter or margarine
  • 1 ½ cups fresh cranberries
  • ¾ cup sugar
  • ¼ cup chopped onion
  • 1 tsp grated orange peel
  • ¾ cup orange juice
  • ¼ tsp ground cinnamon
  • ¼ tsp ground ginger

Directions

  1. Cut chicken breasts (if whole) in half; coat with a mixture of flour and salt. Brown in butter, meanwhile, combine remaining ingredients in a saucepan and bring to a boil. Boil 5 minutes. Pour over chicken and cook slowly for 35-40 minutes until tender.
