Roasted Fingerling Potatoes

Ingredients

  • 2 lbs mixed fingerling potatoes and red, yellow, purple baby potatoes
  • 2 tbsp. olive oil
  • 2 tbsp. fresh thyme
  • 2 sprigs rosemary
  • Sea salt, to taste
  • Black Pepper

Directions

  1. Preheat oven to roast at 450° F. In a casserole dish, add potatoes, olive oil, fresh thyme, salt, pepper, and the leaves of 1 sprig of rosemary, crushed.
  2. Roast for 20 minutes, turn and roast for 20 minutes more. Garnish with rosemary sprig.
