Pumpkin Walnut Bread

Makes 2 loaves

Ingredients

  • 1 ¾ cups cooked pumpkin
  • 1 ½ cup light brown sugar
  • 1 stick melted butter or margarine
  • 3 eggs, lightly beaten
  • 5 cups flour
  • 2 tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • salt
  • 2 cups chopped walnuts

Directions

  1. Preheat oven to 350°F. In a bowl, stir together pumpkin, sugar, melted butter or margarine and eggs. Mix well.
  2. Sift together dry ingredients and stir into pumpkin mixture. Stir in walnuts. Pour the batter into 2 well greased loaf pans, (9 5/8‚Äù by 5 1/2 ‚Äú) and bake at 350°F for about 1 hour, or until bread tests done.
  3. Cool, slice and serve. Freezes beautifully.
