Pecan Topped Blueberry-Apple Crisp

Makes 6-8 servings

Ingredients

  • 5 cups fresh blueberries
  • 1 cup apples, peeled, cored and diced
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract
  • ½ tsp freshly grated lemon rind
  • ½ cup chopped pecans
  • ½ cup all-purpose flour
  • ½ cup quick-cooking oatmeal, uncooked
  • ½ cup brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • 3 tbsp butter

Directions

  1. Preheat oven to 325 degrees F. Mix blueberries, apples, granulated sugar, vanilla and lemon rind. Spoon mixture into a buttered 8 inch square baking pan; set aside.
  2. Mix all of remaining ingredients, except butter, until well blended. Add butter; cut in until mixture resembles coarse crumbs. Sprinkle mixture evenly over filling. Bake about 45-50 minutes or until topping is browned. Remove from oven; let stand 10 minutes before serving with vanilla ice cream. Refrigerate leftovers.
