Oats and Blueberry Muffins

Makes 12-16 muffins

Ingredients

  • 1 ¾ cup all-purpose flour
  • ¾ cup quick-cooking oatmeal, uncooked
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2/3 cup granulated sugar
  • ¼ tsp ground cinnamon
  • 1/3 cup butter, melted
  • 1 egg, beaten
  • 1 cup whole milk
  • 1 tsp pure vanilla extract
  • 1 ½ cup fresh blueberries

Directions

  1. Preheat over to 400 degrees F. Mix flour, oatmeal, baking powder, salt, sugar, and cinnamon. Mix butter, egg, milk and vanilla; stir into dry mixture until just moistened, but batter is lumpy. Fold in blueberries.
  2. Spoon batter equally into greased or paper-lined muffin cups. Bake 20-25 minutes. Remove from cups; cool on a wire rack.
