Mojo Pork Sirloin Roast

Makes 8 servings


  • 4 lb. pork sirloin roast
  • 3 tbsp. ground cumin
  • 3 tbsp. chili powder
  • 1/2 tbsp ground mustard
  • 1 tbsp Mexican salsa, picante
  • 2 tbsp crushed garlic
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cloves
  • 2 tsp ground coriander
  • 1 tbsp dark brown sugar
  • 1/2 tsp salt
  • 2-3 tbsp olive oil
  • 2-3 tbsp soft butter


  1. Prepare paste combining all ingredients and enough olive oil to make it into a thick paste. Rinse roast and pat dry. Reserve 2 tbsp. of paste. Cover entire roast with remaining paste. Let sit in refrigerator for 90 minutes. And outside the frig. For 30 minutes. When you have removed roast from refrigerator make your mojo sauce. Taking the reserved 2 tbsp. paste and all remaining ingredients add to a small sauce pan. Bring to a boil and then simmer for 30 minutes. Stirring often. Reduce buy ½.
  2. Preheat oven to 350 degrees cover roast with soft butter, pour 1/3 of the sauce over roast. Bake 45 minutes pouring remaining sauce over as a baste.
