Mexican Chicken

This recipe is gluten free.


  • 2 pound boneless chicken breasts
  • 1 packet taco seasoning
  • Salt, to taste
  • 1 cup enchilada sauce
  • 8 ounces cheddar cheese, shredded
  • 8 green onions, chopped


  1. Add chicken to pot with taco seasoning, enchilada sauce and salt. Cook on low for 8 hours or high for 4 until chicken shreds. Serve with tortillas. Sprinkle the cheese and green onions over the top. Enjoy!
