Melon with Minted Lime Dip

Makes 8 servings

Ingredients

  • ¼ cup sugar
  • ¼ cup water
  • 6 Tbsp. fresh lime juice
  • 2 tsp. grated lime peel
  • 1 ½ tsp teaspoon freshly grated ginger
  • 8 cups assorted melon balls or cubes

Directions

  1. Combine the sugar, water, lime juice, lime peel and ginger.
  2. Add melon balls and gently toss to coat, cover and refrigerate for 1 to 6 hours.
  3. Thread melon onto wooden skewers or toothpicks. Serve with Minted Lime Dip
