Makes 8 servings
- ¼ cup sugar
- ¼ cup water
- 6 Tbsp. fresh lime juice
- 2 tsp. grated lime peel
- 1 ½ tsp teaspoon freshly grated ginger
- 8 cups assorted melon balls or cubes
- Combine the sugar, water, lime juice, lime peel and ginger.
- Add melon balls and gently toss to coat, cover and refrigerate for 1 to 6 hours.
- Thread melon onto wooden skewers or toothpicks. Serve with Minted Lime Dip
