Mashed Potatoes with Manchego Cheese

Ingredients
- 4 lbs. red skinned or Yukon Gold potatoes
- 1 stick butter
- 2 ½ cups shredded Manchego Cheese
- Milk or Heavy Cream to desired creaminess
- Salt and pepper to taste.
Directions
- Boil potatoes and drain. Mash potatoes with milk or heavy cream.
- Mix in Manchego Cheese.
