Mashed Potatoes with Manchego Cheese

Ingredients

  • 4 lbs. red skinned or Yukon Gold potatoes
  • 1 stick butter
  • 2 ½ cups shredded Manchego Cheese
  • Milk or Heavy Cream to desired creaminess
  • Salt and pepper to taste.

Directions

  1. Boil potatoes. Drain.
  2. Mash with Milk or Heavy Cream.
  3. Mix in Manchego Cheese.
