Maple Roasted Pork Tenderloin

Makes 6 servings

Ingredients

  • 1 1/2 lbs pork tenderloins
  • 1/2 cup pure maple syrup
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 2 tsp orange zest, grated
  • 1 1/2 tsp curry powder
  • 1 1/2 tsp ground coriander
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic, minced

Directions

  1. Trim pork of all visible fat.
  2. Whisk together all remaining ingredients; pour over pork and marinate in refrigerator for 1 hour.
  3. Put pork and marinade it a small roasting pan or baking dish. Roast uncovered for 40 minutes at 350 F. Pork should still be slightly pink in the middle.
  4. Let pork stand for 10 minutes (it will continue to cook).
  5. Cut into thin slices. Drizzle sauce over pork. Serve.
