Hummus with Pumpkin and Pomegranate

Ingredients

  • 1 cup cooked Chick Peas
  • 1 cup canned Pumpkin
  • 1/3 cup Tahini
  • ¼ cup fresh Parsley, minced
  • 3 cloves Garlic, minced
  • 2 Pomegranates

Directions

  1. Puree the Chick Peas, Pumpkin, Tahini, Parsley and Garlic until smooth. Transfer to a serving plate. Break open the Pomegranate and separate the seeds from the inner membranes.
  2. Sprinkle the seeds over the Hummus. Serve chilled or at room temperature.
  3. Serve with: Gooseberries Garlic Chips, Pita Bread, split and warmed, crackers, bread or veggies
