Hearty Beer Noodle Soup

Makes 6 servings

Ingredients

  • 3 to 3 1/2 lb. Gooseberries C.A.B. Boneless Chuck Roast-cut into ½ to 3/4 inch cubes or 2-3 lbs. Gooseberries Beef Stew Meat
  • 1-2 Tbsp. cooking oil
  • 1 large onion, chopped
  • 2 tsp salt or to taste
  • 1/4 tsp pepper or to taste
  • 2 bay leaves
  • 2 cups water
  • 2 cups beef broth
  • 1 bottle Oktoberfest Beer or Beer of your choice
  • 2 cup water
  • 2 cups carrots diced
  • 1 cup celery diced
  • 2 garlic cloves, minced or 1 tsp. garlic powder
  • 1 1/2 cups uncooked narrow noodles

Directions

  1. In a large skillet over medium heat add oil and brown meat
  2. In a slow cooker add broth beer & water and remaining ingredients except noodles. Cover and cook on high for approx. 3-4 hours or medium approx. 6-7 hours.
  3. Cook noodles according to direction on package and add to slow cooker or to individual bowls when serving.
