Grandma Spiegelhoff's German Potato Salad

This recipe is gluten free.


  • 5 lbs unpeeled potato
  • ¾ cup Bacon
  • 1/3 cup cornstarch
  • 1 cup cider vinegar
  • 2 cup water or a little less
  • 1 cup sugar
  • 1 tsp salt
  • Pinch of pepper
  • ¼ tsp. celery seed
  • 1 cup sliced onion
  • 2-4 hardboiled eggs


  1. Cook potatoes in salt water until fork tender, then skin and slice thin.
  2. Dice bacon, fry until crisp, and remove from heat and stir in cornstarch to bacon grease. Add vinegar, water, sugar, salt and pepper, and celery seed and cook until thick. Add onions and cook 5 minutes. Pour over potatoes and stir. Bake until heated through or put in slow cooker to warm through. May be topped with sliced hard boiled eggs.
