German Potato Pancakes

Makes 6 servings


  • 2 eggs
  • 2 tbsp all purpose flour
  • ¼ tsp baking powder
  • ½ tsp salt
  • ¼ tsp pepper
  • 6 potatoes; peeled and shredded or 1 lb pkg. Simply potatoes fresh hashbrowns
  • ½ cup onion, finely chopped
  • ¼ cup oil
  • Topped with apple sauce, sour cream, jam or cranberry sauce


  1. Blend together eggs, flour, baking powder, salt, and pepper in a large bowl. Stir in potatoes and onion; set aside.
  2. Heat oil in large skillet over medium heat. In batches, drop heaping tablespoonfuls of potato mixture into skillet. Press to flatten and cook about 3 minutes on each side, until crisp and golden. Drain on paper towels.
