Garbanzo Bean Tomato Salad

Makes 4 servings

Ingredients

  • 3 tbsp vegetable oil
  • 1 tablespoon red wine vinegar
  • 1 tsp salt, divided
  • 1/4 tsp pepper, divided
  • 1 (15 ounce) can garbanzo beans or chickpeas, rinsed and drained
  • 3 medium tomatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 tbsp minced fresh basil

Directions

  1. In a bowl, combine the oil, vinegar, 1/2 teaspoon salt and 1/8 teaspoon pepper.
  2. Add beans; toss to coat.
  3. Place tomatoes in a serving bowl. Top with onion.
  4. Sprinkle with basil and remaining salt and pepper.
  5. Top with bean mixture. Cover and refrigerate for at least 1 hour.
  6. Toss just before serving.
