Fresh Tuna Sundried Tomato and Mushroom Duxelle

Ingredients

  • 2 cup Minced fresh mushrooms
  • 1 cup Minced Sundried Tomato
  • 2 tbsp Minced Garlic
  • 1 ½ tbsp Capers
  • 1 ½ tbsp Chopped Kalamata Olives
  • 1 tbsp oregano
  • ½ tbsp Basil
  • ½ tbsp thyme
  • 1 tsp Black Pepper
  • ½ cup dry red wines
  • 1 tbsp. Fresh Lemon Zest

Directions

  1. Combine all ingredients except the wine in a bowl. Heat a sauté pan to medium high and add the mushroom and tomato mix. Cook until all the moisture is evaporated then add red wine and stir into mix. Remove from stove set aside.
  2. Grill or sauté Tuna in pan with a little olive oil. Making sure not to over cook. There should be a little pink in the very middle of the tuna. Place finished tuna on plate and spoon a small amount of the Duxelle on top of tuna. Serve with grilled asparagus or sugar snap peas, or wild rice pilaf.
