Fresh Blueberry Drop Cookies

Makes 2 1/2 dozen

Ingredients

  • 3/4 cup solid margarine
  • 1 cup granulated sugar
  • 2 eggs
  • 1 ½ tsp grated lemon rind
  • 1 tsp pure vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup whole milk
  • 1 cup blueberries

Directions

  1. Preheat oven to 375 degrees F. Beat margarine and sugar until fluffy. Beat in eggs, lemon rind and vanilla.
  2. Mix flour, baking powder and salt; gradually beat into creamed mixture alternately with milk. Fold in blueberries. Drop by teaspoonfuls onto a greased baking sheet. Bake 10-12 minutes. Remove from baking sheet to a wire rack.
