Fresh Blueberry Buckle

Ingredients

  • ¾ cup granulated sugar
  • ¼ cup butter
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup whole milk
  • 1 tsp pure vanilla extract
  • 1 ½ cups fresh blueberries
  • Topping
  • ½ cup granulated sugar
  • 1/3 cup all-purpose flour
  • ¾ tsp dry pumpkin pie spice
  • ¼ cup butter

Directions

  1. Preheat oven to 375 degrees F. Cream ¾ cup sugar and butter. Beat in egg. Mix flour, baking powder, and salt; add to creamed mixture. Stir in milk and vanilla until combined. Fold in blueberries. Pour batter evenly into a greased 9-inch square baking pan.
  2. Mix topping ingredients until crumbly. Sprinkle over batter. Bake 45 minutes or until a toothpick inserted near center comes out clean.
