Crock Pot Chuck Roast with Vegetables

Makes 6 servings

Ingredients

  • 1 ½ cup sliced carrots
  • 1 cup chopped onion
  • 1 cup sliced celery
  • 4 potatoes, cut in chunks
  • 3 lbs boneless chuck roast
  • 1 envelope onion soup mix
  • 10 oz can condensed golden mushroom soup
  • 2 cups water
  • 1 tbsp horseradish

Directions

  1. Place vegetables in pot in order given. Place roast on vegetables. Mix remaining ingredients together. Pour over roast.
  2. Cook on high for 5 hours or low for 8 hours. Thicken with a little flour and water if desired.
