Creamy Mint Carrots

Ingredients

  • 2 packages matchstick carrots
  • 1 tsp cornstarch
  • 2 tsp water
  • 1 cup whipping cream
  • 1/4 cup packed brown sugar
  • 2-3 tbsp fresh mint
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

  1. Boil carrots in sauce pan for 10 to 15 minutes. Drain. Combine the water and cornstarch.
  2. Over medium heat, bring cream to a boil. Add cornstarch water and bring again to a boil stirring until thickened. Add remaining ingredients; cook 2 minutes, stirring constantly until thickened.
