Corn, Avocado and Tomato Salad

Makes 4-6 servings

Ingredients

  • 2 cups cooked corn fresh or frozen ‚Äì( 1 large ear of corn yields about 1 cup)
  • 1 avocado, cut into ½ inch cubes
  • 1 pint cherry tomatoes, halved
  • ½ cup diced red onion

Directions

  1. Combine salad ingredients in a large glass bowl.
  2. Pour dressing over salad and gently toss to mix.
