Blueberry Tortellini Salad

Makes 6 servings

Ingredients

  • 9 oz. pkg. three-cheese tortellini pasta
  • 1 cup fresh blueberries
  • 1 cup sliced fresh strawberries
  • 11 oz. can mandarin orange segments, drained
  • ¾ cup green grapes
  • ¼ cup toasted sliced almonds
  • Dressing
  • 3 tbsp granulated sugar
  • 1 tbsp vinegar
  • 1 ½ tsp fresh lemon juice
  • ¼ tsp salt
  • ¼ tsp dry mustard
  • ¼ cup olive oil
  • 2 tsp poppy seeds

Directions

  1. Cook pasta according to package directions; drain and place into a large bowl. Add remaining salad ingredients. Add salad dressing (see directions below); toss lightly. Serve or refrigerate until ready to serve.
  2. Mix first five dressing ingredients. Gradually add olive oil, beating until thick and smooth. Stir in poppy seeds. Cover and refrigerate several hours for best flavor.
