Blueberry Cinnamon Pancakes

Makes 8-12 pancakes

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ¼ cup granulated sugar
  • 1 tsp salt
  • ½ tsp ground cinnamon
  • 1 ½ cup whole milk
  • ¼ cup margarine, melted and cooled
  • 2 eggs, lightly beaten
  • 1 ¼ cup fresh blueberries

Directions

  1. Mix flour, baking powder, sugar, salt and cinnamon. Mix milk, margarine and eggs; stir into dry mixture until blended. Stir in blueberries.
  2. Heat a greased griddle until a drop of water sizzles. Pour ¼ cup onto griddle; cook until bubbles that formed on the outside edges are broken; turn pancakes over; cook other side. Repeat with remaining butter.
