Black Bean Salsa Ranchero

Ingredients

  • 1 Can Black Beans - Rinsed & Drained
  • ¼ Cup Green Onions, Chopped
  • ¼ Cup Red Pepper, Chopped
  • 2 Tbsp. Cilantro, Chopped
  • 1 Cup Salsa
  • 2 tsp. Fresh Lime Juice
  • 1 Clove Fresh Garlic, Finely Diced 0r ¼ tsp. Garlic Powder (or to taste)
  • ¼ tsp. Ground Cumin
  • 1 Small Ripe Avocado

Directions

  1. Combine Beans, Onion Red Pepper and Cilantro.
  2. Combine Salsa, Lime Juice, Garlic and Cumin.
  3. Mix Well.
  4. Pour Salsa Mixture over Bean Mixture and mix gently.
  5. Chill for 2 hours or overnight.
  6. To serve: Chop Avocado gently blend into the Bean Mixture.
