Black Bean and Edamame Salad

Ingredients

  • 1 15 oz can of unsalted black beans drained and rinsed
  • 1 cup grape tomatoes, halved
  • 1 cup fresh or frozen shelled edamame
  • 1 anaheim chile pepper, seeded and sliced
  • ½ cup chopped cilantro
  • 2 oz. fresh mozzarella cut into ¼ inch cubes
  • 1/3 cup diced red onion

Directions

  1. In a medium bowl, combines beans, tomatoes, edemame, Anaheim pepper, cilantro, mozzarella, and onion.
