Bananas Foster Crumb Cake

  • For the Crumbs:
  • 5 Tbsp unsalted butter, at room temperature
  • ¼ cup sugar
  • 1/3 cup packed brown sugar
  • 1/3 cup all purpose flour (GF use Domata)
  • ¼ tsp salt
  • ½ cup chopped walnuts
  • For the Bananas:
  • 2 Tbsp unsalted butter
  • 1/2 cup brown sugar
  • 3 Tbsp dark rum
  • 2 large bananas, sliced in rounds


  1. Center a rack in the oven and preheat the oven to 350F. Butter an 8 inch square pan and put it on a baking sheet.
  2. For the Crumb: Put all the ingredients except the nuts in a food processor and pulse just until the mixture forms clumps and curd and holds together when pressed. Scrape the topping into a bowl, stir in the nuts and press a piece of plastic against the surface. Refrigerate until needed.
  3. For the Bananas:
  4. Combine the butter and sugar in a flambé pan or skillet.
  5. Place the pan over low heat either on an alcohol burner or on top of the stove, and cook, stirring, until the sugar dissolves.
  6. Stir in the banana liqueur, then place the bananas in the pan.(if not using liqueur, just add bananas)
  7. When the banana slices soften and begin to brown, carefully add the rum. (again, if not using rum, simply take bananas out at this time)
  8. Continue to cook the sauce until the rum is hot, then tip the pan slightly to ignite the rum.
  9. When the flames subside, lift the bananas out of the pan and place aside to cool until needed.
